Shrimp Etouffee


For some reason I was expecting something different. The etouffee I have had in the past seemed a bit darker, spicier perhaps...? Nonetheless, it had good taste! Enough veggies in there to give a little crunch here in there. Definitely had a "kick" to it as well.

South Carolina Mustard Sauce


I amped up mustard this recipe! It was the topping to our jalapeno cheese sausage link dogs! This is a bit sweeter than regular mustard, but I love it. 



Mix all the following together -
1/2 cup yellow mustard
1/3 cup packed light brown sugar
1/4 cup apple cider vinegar
1 teaspoon Worcestershire sauce
1 teaspoon onion powder
1/4 teaspoon cayenne pepper
1/4 teaspoon salt

Butternut Squash Ravioli with Pecan Brown Butter Sauce


Hmmm where oh where to start on this one. This is one of the simplier recipes in the book. Store bought ravioli and only a handful of ingredients. What I thought would be a breeze, ended up turning out pretty badly. I cooked the brown butter for too long, and theres nothing worse than burnt pecan brown butter. Ew! Bitter and not very delightful. I apparently had the heat too high as well, Mark pointed it out, but it was too late. By the time I lowered the temp there was no turning back. Needless to say, that is why there is only one ravioli here with that pecan butter. The rest were tossed with some easy cream sauce.

Crispy Tortilla-Crusted Tilapia and Southern Brown Rice with Mushrooms



Aside from the fact that the lime zest was not good for my acid reflux, the tilapia was pretty tasty! To put it simply, you crumble up a cup of tortilla chips, add some lime zest, dry basil and 4 tablespoons butter, slap it on some tilapia and ta-da! Oh yeah, bake it at 425 for 20 minutes ;) Lucky for you, I am including the rice recipe at the bottom of the post as well.



Honestly, mine looks a little different. I am pretty sure they doctored it up ;)

Pasta with Creamy Primavera Sauce


I'm falling behind. I made this MONDAY night - whoops! This was pretty good, although it was slightly bland to me. But it had some veggies in there so it was nice!

Ultimate Coffee Cake


Just reading the title, I had hoped for a cinnamony, spicy array of swirls but quickly learned this was different than any other coffee cake I had made. The main ingredients consisted of crescent rolls, sugar and cream cheese. If you know me, I am not a big cream cheese fan.



Here was my little tweek to help with my lack of interest for cream cheese...

Chocolate Chips in the corner section of the cake ;)

Sunday Morning Casserole


I love weekend breakfast. You always have more time to put into something yummy, and you aren't in a rush to get to work. For this one, you didn't need all that much time. Paula even mentions that you can put this together the night before so you can just pop it in the oven the next morning. My mistake was that I didn't slice the potatoes thin enough, they didn't quite cook all the way through.

Pineapple with chicken, pineapple with pizza, pineapple with anything other than a dessert, I am not a fan! With that said, this was edible in my eyes, but I did not go back for seconds. However, Mark did - so that makes it a success!

Spicy Candied Pecans

The smell of this next recipe was AMAZING! The scents of cinnamon and cloves throughout the house was a nice addition to the evening. My last pecan recipe, Dr Pepper Pecans, was a less fortunate experience so I wasn't sure how this one would turn out. GREAT! I am not a roasted nuts fan, but these were absolutely delicious!

The past few days we had a guest, Mark's brother! He was in town from out of state so we spent the weekend catching up, watching movies and treating ourselves to some pretty tasty meals.
