Sour Cream, Bacon and Split Pea Soup


I was just feeling like having soup today, so I tried to find the one I had all the ingredients for, and I didn't need anything additional for this one! A few months back Mark made pea soup with the leftover ham at Christmas time. It was DELICIOUS, so it is hard to look past that. Under the circumstances, this recipe was still good. It was more pea-ey since itcalled for no ham, but the bacon was a nice addition.

Recipe:
Cook approximately 6 slices bacon in a large pot, then let it drain on a paper towel after cooked to a crisp. Add a stick of chopped celery, a chopped onion and a little garlic to the pot. Saute until soft and then add a tablespoon of tomato paste. Pour in your 1 pound of split peas and 8 cups of water. Add in some thyme, salt, pepper and a bay leaf. After bringing to a boil, simmer for about 2 hours, or until all your peas are broken up and soup is smooth. Serve with a dollop of sour cream and the crispy bacon.

St Paddy's Day Corned Beef and Cabbage


This was great! I really loved the cabbage. The best part about it? Easy!

Recipe:
Drop the corned beef brisket and seasoning packet in a pot full of water, be sure the brisket is completely covered. Bring to boil and then simmer for about 2 1/2 to 3 hours depending on the size of brisket. Remove and slice into thin strips.

Remove the darker leaves from the cabbage and chop the remainder into good size pieces. Melt 3/4 stick butter (or less if you have a smaller cabbage) and toss in your green cabbage. Stir in butter and then add a couple teaspoons of Paulas House Seasoning (which you can find the recipe online).

Buttermilk Pancakes


These were very fluffy and cake-like, I also tasted the batter and reminded me of baking a sweet treat!

Recipe:

In a large bowl, mix together 2 cups flour, 1/4 cup sugar, 1 teaspoons baking soda, 2 teaspoons baking powder, 1 teaspoon salt.

In a medium bowl, whisk together 1 3/4 cup buttermilk, 1/2 stick of melted butter, 2 large eggs and 1 teaspoon vanilla.

Fold the liquid mixture into the dry mixture and then drop into about 3/4 cup rounds, until all mix is gone.

She recommends maple syrup, so we used Sprague's Maple Syrup. We bought this from a cheese shop in Cuba, NY. It was delicious!

My Favorite Lasagna



Dinner last night: Although this is actually the name of the recipe, I think it may actually be my favorite lasagna. Mark and I disagree about this one, our first disagreement in the cookbook. He doesn't believe this classified as lasagna because there was no ricotta cheese. I, however, believe it was amazing and didn't even care! ;) 

To sum it up: Mix sauteed onions and garlic with ground beef and spaghetti sauce, adding cream cheese to the sauce. Layer the noodles, sauce, mozzarella and parmesan. Bake in the oven for about 30 minutes.

Crunchy Wiener Schnitzel with Paula's Classic Potato Salad


I. was. not. looking. forward. to. this. recipe. My momma is going to holler "fer shame on you Kylie Beth!" For those of you that may have been as confused as me, this wiener schnitzel recipe consists of veal (boo) dredged in a delightful coating. There was no hiding the fact that there was veal inside though, so I wasn't a big fan. I amdefinitely going to use this same recipe, except use chicken next time. The breadcrumb mixture made it crunchy and very tasty! As for the potato salad, it was great! It consisted of red potatoes, green onions, celery, dill pickle relish, mayo, apple cider vinegar and hard boiled eggs.

So bottom line, if it wasn't veal, it would have been good!

Cinnamon Toast Muffins


Made these about a week ago - forgot the blog post - whoops! ;)

Are y'all ready for this? I am going to make a statement that will most likely blow your minds. Although this recipe is good, it is a lesser loved recipe than one I have made in the past. This is a "not quite there" recipe, a runner up to a French Breakfast Puffs recipe I made once. Perhaps you know of this other country cooking chef, Pioneer Woman...? These were still good, but believe it or not, Paula used a ton LESS butter than Pioneer Woman.
