Buttermilk Pancakes


These were very fluffy and cake-like, I also tasted the batter and reminded me of baking a sweet treat!

Recipe:

In a large bowl, mix together 2 cups flour, 1/4 cup sugar, 1 teaspoons baking soda, 2 teaspoons baking powder, 1 teaspoon salt.

In a medium bowl, whisk together 1 3/4 cup buttermilk, 1/2 stick of melted butter, 2 large eggs and 1 teaspoon vanilla.

Fold the liquid mixture into the dry mixture and then drop into about 3/4 cup rounds, until all mix is gone.

She recommends maple syrup, so we used Sprague's Maple Syrup. We bought this from a cheese shop in Cuba, NY. It was delicious!
